For Tuesday’s tacos in a bag and Wednesday’s Girl Scout Gumbo, I bought a pound of ground beef and cooked it with a diced green pepper and one diced onion. My daughter helped chop the veggies and cook the meat and veggie combo. I brought half on Tuesday and half on Wednesday (1 serving for each of us for each day). My daughter isn’t into a ton of spice, but we tossed in a bit of cumin, pepper, salt, and garlic to taste. I brought a small container of GFCF salsa and a small container of Tofutti Sour Cream. We used the lettuce and tomatoes from camp and skipped the cheese. My daughter says these are the best!
For the Snicker Salad, I was just going to toss some peanuts and GFCF chocolate chips into the salad and call it good. However, while picking up some Swedish Fish in the candy section of our local Cub, I noticed Chew-ets Peanut Chews which I had never seen before. As the little bag of bite-sized Chew-ets only cost a little bit, I took a chance and bought it. After researching it and contacting the company, I felt comfortable using Chew-ets as a snickers substitute.
For the S’mores, I used large Jet Puff marshmallows and homemade GFCF chocolate chip cookies I had in the freezer in the interests of portability. If you want to go all out for authenticity, we have also used dark chocolate from Tropical Source and rice bran crackers from Health Valley. Got to love camping food!

Taco Seasoning (meat pre-seasoned at home)
Cheese SKIPPED
Lettuce Used camp’s.
Tomatoes Used camp’s.
Sour cream Tofutti Sour Cream
Salsa GFCF salsa (ie: Green Mountain Gringo)
DIRECTIONS:
Heat ground beef over fire. Stir in taco seasoning. Crunch up chips in bag. Open top of bag; add cheese, lettuce, tomatoes, sour cream and salsa, as desired. Eat out of the bag with a fork.

DIRECTIONS:
Cut apples and snickers into bite size pieces. Apples do not need to be peeled. Stir together with whipped cream in large bowl.

DIRECTIONS:
Roast marshmallows over fire. Place piece of chocolate on graham cracker, add warm marshmallow, top with second graham cracker, squeeze together and eat.
