I didn’t get this post out on Monday, obviously, but I will still be linking up today ‘cause I don’t want to miss out on the fun. I was prepping for a class on gluten free mixes, so that took priority. I do like teaching classes! I meet some really wonderful people and get to cook and eat. What could be better? For the lovely people who have taken my classes, I will make a big effort over the next week to get my recipe links page together. Please be patient with me. I do have 3 little cuties and a big cutie (and Girl Scouts, and work, and library volunteer, and church, and church volunteer, and dogs, and fish, and did I mention those cuties?, and SLEEP, etc.) that takes my time up also… Trust me, if I could skip the whole work thing and just plan food and menus to help others out all the time, that would be my dream job and LOTS of fun for me, too! But it is true, I do need to make the time commitment just to get those recipes linked to make things easier to find for all of us. Thanks for getting me going on that!!

Citris-Kissed Chicken Tenders (I also have these chicky nugget recipes), apple slices, mango chutney dip, green beans (full length, lightly blanched, then chilled so you can eat them with your fingers)
Wednesday: Mommy works 10 hours, dress rehearsal for big kiddos (for church skit – the story of Joseph with a Star Wars theme! Ha, ha, ha!)
Check out Stephanie’s (the Crockpot Lady) blog! She is using her crockpot EVERY DAY this year and posting about it. She uses all gluten free ingredients as they need to for their household. I have been banned from reading her blog on my laptop at night in bed – apparently my giggling wakes up my husband – wimp!

Friday: Mom works 5 hours, family fun night at church (my big kids are in the skit):
Breaded Pork Chops, Asian Style Slaw and Roasted Sweet Potato Wedges (basically the same as the Roasted Rosemary Potatoes, but with all sweet potatoes instead). (Pork chop and slaw recipe will be posted.)
