Slow Cooking Thursday

Above is a photo of what my daughter did for Valentine’s Day this year, donate her hair to Locks of Love.  She did not have any separation issues with her hair and had a great time.  Mommy misses it more, I think!  It was so thick and such a pain for her to take care of…she loves that she can do her hair by herself now because she can reach it all.  The stylist at Juut Salon Spa did an amazing job.  They will cut and style your hair for free when you donate your hair.  They have envelopes and donation slips right at the salon and they even send it out for you, so it was so easy to do.  


In honor of all the wacky neon GLUTEN FREE marshmallow critters that show up this time of year, check out my silly Peep entry.  Those squishy little guys make me giggle, but what other people think up to do with them amuses me even more!

Crock Pot Fajitas

8 servings


2 lbs. flank steak or pot roast, fat removed and sliced into strips

2 large onion, sliced into strips

1 large green bell pepper, sliced into strips

1 large red bell pepper, sliced into strips

1 jalapeno pepper, sliced into strips (skip if too spicy for your family)

2 T fresh cilantro

3 cloves garlic, minced

3/4 t chili powder

1 1/2 t ground cumin

1 1/2 t ground coriander

1/2 t salt

1 15 oz. can of diced tomatoes, undrained


16+ corn tortillas, warmed

1/2 cup gluten free salsa 



Place peppers and onion in a 5-qt. slow cooker. Top with beef. Combine rest of ingredients except tortillas and salsa; pour over meat. Cover and cook on low for 6-7 hours or until meat is cooked through.


Uncover and stir ingredients.  Using a slotted spoon, place meat mixture down the center of each tortilla. Top with 1 tablespoon salsa; roll up.

yummy!!!  we’re a gluten free family, too.  My 3yr old has Celiac.  We were diagnosed a year and a a half ago.

yay for the hair donation—that is wonderful.  what a gift of love.
