Over at familyfun.go.com they have another Month of Meals posted. We are going to follow along a bit, making everything gluten and dairy free and mixing it up a little to fit our schedule. An already mostly planned menu sounds good to me this week! I put a copy of what it looks like on the bottom, as the Month of Meals are replaced every month.
The big kiddos have a short week this week due to conferences, so they will be able to help out with catching up on some of the Thanksgiving prep. My big girl and I also get to go on a field trip for Girl Scouts for her first horse back riding experience. Woo!
Come on back Thursday for another exciting installment of Holiday Planning gluten and dairy free with withorganizedchristmas.com.
Head over to Menu Plan Monday and check out what’s cooking! There are so many menus over there. Thank you, Laura for hosting!
I am also trying to participate in the Gluten Free menu swap, most of these menu bloggers also participate in Menu Plan Monday. The gluten free menus for this week are consolidated at Gluten Free Sox. This is hosted by a different blog each week and started by the Gluten Free Mommy . I hope I got linked up this week! (I’m not super tech-savvy, remember?)
Monday: Mommy’s night off/Daddy’s cookin’
Tuesday: (Note: I need to cook this ahead and bring to piano practice.) Kid Kebobs (use a gluten free soy sauce on this one), Smokey Potato Packets in the oven, and Carrot Coins (using Earth Balance Buttery Spread or oil instead of butter).
Wednesday: Quick & Easy: Sticky Chicky Legs, Sesame Broccoli (I’ll be sautéing this in a pan instead of using a microwave), Mashed Sweet Potatoes (I’ll be skipping the milk and butter, and topping with a drizzle of olive oil, dash of nutmeg and cinnamon, and a sprinkle of brown sugar).
Thursday: Kids’ Favorites: Gluten Free Spaghetti and Meatballs (my kids would eat this EVERY week), Gluten Free Focaccia (make your favorite gluten free pizza crust, drizzle with a bit of olive oil and sprinkle with 2 minced garlic cloves, 1 ½ tablespoons chopped fresh rosemary, 2 teaspoons fresh thyme leaves, and coarse salt to taste.), and Spinach Salad.
Thursday Slow Cooker/Canning: Cardamom Apple Butter
Meat-Free Friday: Creamy Corn and Potato Chowder (Use oil instead of butter. Be sure your chicken stock is gluten free. Use coconut milk for the heavy cream. Use 1 ½ tablespoons cornstarch for the all-purpose flour.), Cornbread, Broccoli Trees (I’ll be skipping the dip part, but you could use tofu “sour cream” for the dip and a GFCF mayonnaise.)
Family Fun’s Month of Meals:
(You will need to alter to be gluten and dairy free, but it’s a great starting point!)
