Yep. I am back. Too many tomatoes and too little time. I was having a bit of a hard time menu plannin
g there for a couple weeks. If you are making spaghetti sauce or canning tomatoes or whipping up some other tasty treat, there will always be extra. So, guess what, spaghetti sauce and noodles, or cucumber salad and sandwiches with LOTS of tomatoes are dinner, too. Part of the hazards of canning, I guess!
On Thursday, I need to make up some coconut yogurt and a batch of cupcakes to freeze. I saw this great magazine cover at the store with owl cupcakes on it that I just have to do for fall. I am a sucker for cupcake ideas! We actually have no Thursday night activities this week and daddy will be working. A little frosting play time is called for, don’t ya think?
I have been drying tomatoes also and have a hankering for a chicken breast stuffed with those tasty tidbits and basil, but I think I will have to put that into next week.
Here’s the plan for the week. I hope your week goes well.
Tuesday: Meatloaf, steamed veggies
Wednesday: Barbeque chicken legs in the crock pot, salad with GFCF ranch dressing
Thursday: Roasted fish and potatoes, stir fried veggies
Friday: Thai-style steak salad and garlic bread
On Saturday the mamma and the daddy bear will be out, so I will be leaving kid-friendly fare, but I haven’t decided yet what that may be.
