Gluten Free-zer Friday – Raspberry Marinade

Head over to MJ’s for Freezer Food Friday.  Her recipe is for Steak Fajitas which could be made gluten free if you are sure to use a GF hot sauce and salsa and corn or teff tortillas.  To make dairy free, skip the sour cream, use the tofu “sour cream”, or plain coconut yogurt.

This recipe is from my dad.  He came up with it and uses it to coat boneless skinless chicken breasts and pork chops.  I am using it as a “dump” marinade.  Put all the ingredients in a labeled (with the contents!) gallon freezer bag, smooch them around to mix, then dump in the meat of your choice.  Seal the bag, mix the meat around in the sauce, remove as much air as possible from the bag, seal and freeze.  When you are ready to cook this, thaw the bag overnight in your refrigerator.  When it is dinnertime, cook the meat as desired.  If you would like to use the marinade as a glaze, boil in a sauce pan until thickened.

 

Papa’s Raspberry Surprise Sauce

3/4 Cup Raspberry Jam (I use seedless)
1/3 Cup Apple Juice or White Wine
1/2 Tbsp Wasabi Powder or dry mustard (be sure gluten free)
1/2 Tbsp Cinammon Chipotle Seasoning/Rub (my dad used McCormick’s Grill Mates Cinnamon Chipotle Rub) (McCormick Allergen statement)
1/4 Tbsp Chili Powder

Blend all ingredients until smooth.

Great for grilling, Crock pot simmering or cook down to thicken for dipping sauce.

Can substitute other flavor jam if wanted, such as apricot.

Menu Plan Monday – February 23, 2009

Everyone is finally well at our house, and I am finally getting a tiny bit caught up from the extras that can’t happen when you need to snuggle sick kiddos.  And I have some great new mittens, a fab kettle dyed merino that is dark red with bits of mauve and burgundy that I have knit in self defense to keep my 13 year old son from “borrowing” them.  Ha!  Cozy hands for me!

Gluten Free Menu Swap Monday

 

Monday:  40 min training walk/Boy Scouts (Walagazoo)/start gluten and dairy free bread (Boo! I missed my littlest daughter’s dance class!)

    Roast Beef, caramelized onions, steamed asparagus

 

Tuesday:  Grocery shop/40 min training walk/Piano lessons/bake bread and muffins for the freezer/Iron Cupcake entry due…

  Roast chicken and sweet potatoes, salad

 

Wednesday:  50 min training walk/Mom volunteer in elementary school library/Science Fair set up night/make chicken stock, and freeze cooked chicken

    Gluten Free Chicken Noodle soup, salad and gluten free popovers (I’ve been on a quest for the perfect ones lately!  We tried two different recipes last week, but they weren’t quite right…)  

 

Thursday:  Kindergarten conferences/Mom volunteer in Kindergarten class/50 min training walk/Science Fair

  Beef Daube in the crock pot, salad, gluten free French Bread

 

Friday:  Mom’s Bible study/See middle school play??/Gluten Freezer Friday with a new marinade my dad cooked up!

  Gluten and Dairy free “taco” pan pizza, salad

 

Saturday:  50 min training walk/Mommy at the Gluten Free Roundup at the Lakewinds in Channhassen.

 

Sunday:  Mom teach Sunday School

 

Other things to do this week:  Help oldest daughter bake off the last of her experiment and finish science fair board, put in 15 hours data entry work, prep for up coming class and the gluten free roundup, work on recipe linking for blog (maybe I can get that finished sometime, huh?  Slow and steady wins the race, right?), bake off Iron Cupcake entry, and Daring Baker challenge…  Also need to work on next e-book, order seeds for garden, set up area for seed starting, cut fabric for cloth napkins, make coconut yogurt, and send out fund raising letters for 3 day walk…   Woo!

Gluten Free Roundup at Lakewinds

If you live in the area, this will be of interest to you.  It’s the 2nd Annual Gluten Free Roundup at Lakewinds Natural Foods.  The great thing about it is that there will be a ton of vendors and samples there, all gluten free!  It’s a great chance to “try before you buy.”  Check it out!

Still yucky at our house…

My daughter is STILL home.  (sigh…)  Poor little honey…  So, no Gluten Free-zer Friday this week.  I am hoping all the germs leave our house and I can get back to a more normal schedule for us and I can have everything back up and running next week.  Wish me luck!  I think I might need it!

The good, the bad and the snotty…

First the bad and the snotty:

 

My (good) little sweetie is home again today with a fever and major snottiness.  So, she has spent the day watching movies and like this:

The good?  Well, having someone who wants to constantly snuggle means I have gotten a lot of typing work done on the laptop (though, not on the blog…) and the project that I carry around to work while out and about (so only a row or two happens at a time, which means it grows SLOWLY) has grown to this:

Aren’t they fun?  It’s pink!  It’s green!  It’s orange!  It’s checks and stripes all in one!

 

Also good?  Being on the laptop while snuggling also means I have been trolling around on the net, which is something I haven’t had a lot of time to do lately.  Guess what I found?

It’s a new gluten free magazine, Delight Gluten Free!  Yay!  I can’t wait to check it out.  They are just getting started and will be adding things to their site weekly.  Here’s what they say about their magazine:

Menu Plan Monday – February 9, 2009

Head over to Laura’s for Menu Plan Monday.     The Gluten Free Menu Swap is being hosted by Cooking and Uncooking and she has chosen chocolate as the theme ingredient.  I am making cheese cake pops dipped in dark chocolate for all the family and heart shaped chocolate cupcakes for my family this week.

 

Monday: 40 minute training walk (2 1/2 miles)/orchestra day/work 5 hours/dance class/boy scout meeting/bake gfcf bread/make dough for Valentine cookies (using rollout dough from here)

  Salsa Roast Beef over baked potatoes and salad

 

Tuesday:  40 minute training walk (2 1/2 miles)/piano lessons/prep for training/work 3 hours/bake valentine cookies (freeze for Friday and Saturday)

    Chicken Jambalaya and salad


Wednesday:  30 minute training walk (2 miles)/mom volunteer in elementary school library/youngest’s friend over to play/prep for training

  Roasted Veggie Dinner and salad

 

Thursday:  40 minute training walk (2 1/2 miles)/run staff GF training

  Daddy’s day to cook!  

 

Friday:  Help with kindergarten Valentine’s party/elementary school carnival

  Sweet and Sour Chicken and rice

 

Saturday: Valentine’s Day/50 minute training walk (3 1/2 miles)

Lindsay at Passionate Homemaking had a great Nutritious Freezer Meal Carnival on January 20th you will want to check out.  There are even gluten free and gluten and dairy free recipes on the list.  Woo-hoo!  Gotta love it!

Easy Pork Chops

8  pork loin chops
6 tablespoons gluten-free soy sauce
6 tablespoons gluten-free ketchup (we prefer fruit juice sweetened)
4 teaspoons honey

Place pork chops in freezer zip-seal bag. Mix remaining ingredients and pour over chops.  Label and freeze. To reheat, thaw overnight and bake in baking dish at 350 degrees for 45 minutes or until pork is cooked through.
Serve with a rice or quinoa pilaf and roasted spiced potatoes (try adding sweet potatoes to the mix – yum!) and a salad.

We interrupt your regularly scheduled programing…

…due to more seasonal yuckiness.  My littlest one is now ill.  I am so far keeping the illness at bay for me with cranberry, kombucha tea and zinc.  Back germs, back!!  

 

I am using this time to rest and cuddle with my sweetpeas.  Obviously we need the slow down time right now.  Back for sure on Friday with Gluten Free-zer Friday in case anyone would like to join in.  I will hopefully get last week’s Gluten Free-zer Friday recipe up by then, also, and update how I packed up my oldest daughter’s food for her trip (she was all better and set to go in time, thank goodness.  And the laundry is even caught up.  Yay!)
