Here is my groovy gluten free dairy free adaption follow along with the organizedchristmas.com crew.  I hope this helps you out!  Check out their site.  It is really helpful for me to have the “a little bit at a time approach.”  

 

Countdown Day One:  Get Organized!  recipe: “ pumpkin poop” –Just a silly little handout.  There is a printable tag at the site.  If you can find GFCF candy corn, go for it, but for a healthier alternative try toasted pumpkin seeds.  If you gotta have the color, a few yellow, orange and red Skittles would also work  mixed in for some color.

 

Countdown Day 2: Christmas Notebook!  The Christmas notebook free printables are brilliant.   Recipe:  Pumpkin Cookies – Okay, this is weird as is Candy Cane cookies on one page and pumpkin spice cookies on another.   Of course, I will just be using my tasty gluten and dairy free Pumpkin Cookies.  Yum!  Don’t worry, gluten free Candy Cane cookies will be coming!

 

Countdown Day 3: Holiday Calendar!  recipe:  a gift in a jar – Here is a link to what I found.

 

Countdown Day 4: Values Check! This one is great!  Think about what really is it that makes the holidays special for you and your family.  As you may guess, baking together is a big deal for us.  BUT for the past couple of years we realized every Christmas cookie type was not realistic.  So, everyone gets to pick one or two kinds (I may pick out more than two…’cause I’m the mommy, that’s why!) and we spread the baking out over the season.  The kids really want a gingerbread house this year.  That has been put by the wayside for the past couple of years, so it is on the list.  However, we can’t not do everything, so adding to the list means something else must come off.  There is only so much mamma to go around and I don’t want to be a crab when the big day is here!   recipe:  reindeer chow:  I would make gluten free “Puppy Chow” with sunbutter instead of peanut butter, because that is what we like.  Let me know if anyone needs the recipe, and I’ll post it.

 

Countdown Day 5: Master Gift List!  recipe:  almond-chocolate toffee – Super easy to alter.  Use GFCF chocolate chips and Earth Balance Buttery Spread.  I am not super excited about the corn syrup, but occasionally, what are ya’ going to do…

 

Countdown Day 6: Christmas Card list!  recipe:  freezer cooking – Here are some links to freezer plans I have on my blog:  Chicken Freezer Plan,  Ground Beef Freezer PlanFreezer Marinades.  Don’t forget you can always double a recipe as you are cooking and pop the second one into the freezer for another day. 

 

Countdown Day 7: Holiday Home Spruce-Up cranberry bread – I haven’t tried it, but here is one I found on recipezaar.com: Gluten Free Cranberry Bread

 

 

Countdown Day 8: Reality Check Week!  I love this week…reality checks are always a good idea!  recipe:  Snowman Soup – Cute printable tag on the site.   

                                                             

Gluten and Dairy Free Hot Cocoa Mix:  For each serving of one cup of almond milk (or milk of your choice) I mix 2 tablespoons unsweetened cocoa, 2 tablespoons cane juice crystals, and a dash of cinnamon and a dash on nutmeg.  Put in 1/8 teaspoon gluten and dairy free vanilla powder, if you got it.  Heat dairy free milk in a small saucepan.  Add remaining ingredients; whisk until smooth and heated through. 

 

Countdown Day 9: Holiday Budget!   recipe:  peanut blossoms - 

                                                    Gluten Free Peanut Butter Cookies
1/2 cup gluten-free margarine (such as Earth Balance Buttery Spread)

1/2 cup dark brown sugar

1/2 cup white sugar

1 egg

1/2 cup salted unsweetened peanut butter

1 1/2 cups bean flour blend
1/2 teaspoon xanthan gum

1/2 teaspoon baking soda

 

For peanut butter blossom cookies:  gluten and dairy free chocolate chunks, one for each cookie, if making “blossoms”  I cut up a GFCF chocolate bar into squares.

 

Preheat oven to 375. In mixing bowl of a stand mixer, cream margarine, peanut butter and sugars until fluffy. Beat in egg. In a separate bowl, mix bean flour blend, xanthan gum, and baking soda evenly. Add dry to wet ingredients, beating on med-high speed until thoroughly blended. Roll dough into 1-inch balls, and place 2 inches apart on an ungreased baking sheet. Press them with a fork in a criss-cross pattern.  Or leave in a rolled ball for “blossom” cookies.   Bake 8-10 minutes.  If making “blossom” cookies, press a chunk of gluten and dairy free chocolate on the cookie.Let cool 5 minutes before removing from baking sheet. 

Countdown Day 10: Healthy Holidays! recipe:  confetti bean soup jar mix – all gluten and dairy free if you use GFCF bouillon cubes.  Click hear for “Bouillon Without the Bull”.

 

Countdown Day 11: Holiday Housework Plan!   recipe:  chocolate coffee spoons – Use gfcf chocolate.  For white chocolate that is gfcf check out veganessentials.com  and Chocat.com which has a wide selection of GFCF candy and chips.


Countdown Day 12: Christmas Magazines!  recipe:  haystacks – To alter, I would use almond or coconut milk, Earth Balance Buttery Spread, GFCF vanilla and GFCF oats or quinoa flakes.  Actually, I will just be making truffles closer to Christmas…mmmm.

 

Countdown Day 13: Wardrobe Check!   recipe:  garlic mashed potatoes  – Yeah, this doesn’t work for me.  First off, I don’t really like to freeze potatoes much as it really messes with their texture.  And of course cheese and milk… I would not worry about a pre-frozen potato dish, personally.  Potatoes don’t take that much time to cook up on the big day.  Of course, adding garlic is a great idea!

 

Countdown Day 14: Decor Declutter!   recipe:  pumpkin nut bread – 

 

Pumpkin Bread

· 13/4 bean flour or rice flour blend

· 1 teaspoon xanthan gum

· ½ teaspoon ground cinnamon

· ¼ teaspoon baking powder

· 1 teaspoon baking soda

· ¼ teaspoon ground cloves

· 1/8 teaspoon nutmeg

· 1/8 teaspoon ground ginger

· 1/3 cup olive oil 

· ½ cup dark brown sugar

· 1 cup pumpkin puree 

· 2 eggs

· 1/3 cup water or gfcf milk replacement

 

Preheat the oven to 350 degrees. Whisk all of the dry ingredients except the sugar in a medium bowl.  In a stand mixture blend the oil and sugar together well. Beat in the eggs. Add half the dry ingredients and stir until just blended. Add the water or milk replacement and stir until just blended.  Add the rest of the dry ingredients and stir until just blended.  Pour into a well greased 9×5 bread loaf pan, spreading the batter with a spatula. Bake for 60 minutes.

 

Countdown Day 15: Gifts and Giving Week!   recipe:  turkey poop – Okay, like the pumpkin poop, weird, but my son would think this was funny.  Be sure to use GFCF treats.
